Stuffed pineapple

ingredients

serves 2
1/2 pineapple
1 tbsp fresh mint leaves, chopped
200 g (7 oz) yoghurt
1 - 2 tbsp orange juice

method

1. Scoop the pulp out from the pineapple and cut into cubes. Reserve the shell.

2. Place the flesh into a bowl and add the yoghurt, mint and orange juice. Mix together to combine.

3. Spoon the mixture into the pineapple shell and serve.
