50 g sugar
50 g butter
1/3 mango, sliced
25 ml coconut-flavoured rum
50 g raspberries, to serve
1. Melt the sugar and butter in a large frying pan.
2. Add the mango and cook until it is starting to brown and caramelise.
3. Pour over the rum.
4. Serve in a bowl with the raspberries.
