ingredients

makes 12
12 prunes, soaked
6 slices streaky bacon
12 cocktail sticks

method

1. Put the soaked prunes in a small saucepan, cover with water, bring to the boil and simmer for 5 minutes. Drain and allow to cool slightly.

2. Remove the stones from the prunes and reshape.

3. Cut the rind from the bacon, cut each slice in half and smooth out with a spatula.

4. Put a piece of foil on the grill pan and arrange the slices of bacon on the foil.

5. Cook for 2 minutes under a hot grill. Do not allow to crisp.

6. When slightly cooled, wrap the bacon pieces around the prunes and finish cooking under the grill or in the oven if more convenient.

7. Secure with cocktail sticks, and serve hot with pre-dinner drinks.

Polish - marinade stoned prunes in vodka (that's not why they're stoned!!!) Wrap in stretched streaky bacon. Oven bake for 40ish minutes. Serve on bed of dijon mustard and lemon juice (mixed) and garnish with finely sliced spring onions and cucumbers.MMMMMMMMMMMMMM
French/Greek style - marinate prunes in brandy. Stuff each prune with some feta and sprinkle with oregano. Wrap in streaky bacon and bake as before. If wrapped in pancetta, bit less cooking. Serve with rocket and aioli and loads of pinot grigot.MMMMMMMMMMMMM
