Fish and Potato Eggs

ingredients

serves 4
Deep fat or oil to fry
8 oz (225 g) cooked cod fillet
1 lb (450 g) potatoes, mashed
A little milk to bind
Salt and pepper to taste
1 medium egg, beaten
Fresh dry breadcrumbs

method

1. Heat the fat or oil until just smoking.

2. Skin, bone and flake the cod and mix with the mashed potato, adding a little milk to bind and seasoning to taste.

3. Divide the mixture into equal portions and form each into the shape of an egg.

4. Coat with the beaten egg, then roll in breadcrumbs.

5. Fry in the fat until nicely brown all over..
