Pasta Noodles with Spinach and Salami

ingredients

serves 1
6-8 lasagne sheets
1 tbsp olive oil
3 - 4 salami slices, cut into strips
1 garlic clove, chopped
1/2 onion, sliced
handful of spinach leaves
salt
freshly ground black pepper

method

1. Bring a large pan of water to the boil and cook the lasagne sheets for 8-10 minutes (or according to packet instructions).

2. Drain the lasagne and cut into long, thick strips.

3. Heat the olive oil in a pan and gently fry the salami, garlic and onion for 2 - 3 minutes.

4. Add the lasagne strips to the pan and heat for a further minutes.

5. Remove from the heat and place in a large bowl. Add the spinach leaves and toss together.

6. Season to taste and serve.
