Crispy Cabbage

This makes a wonderful accompaniment to meat or vegetable dishes, just a couple of spoonfuls adds a crunchy texture to a meal. It goes especially Well with prawn dishes.

ingredients

serves 4
4 juniper berries
1 large Savoy cabbage
60 ml (4 tbsp) vegetable oil
1 clove garlic, crushed
5 ml (1 tsp) caster sugar
5 ml (1 tsp) salt

method

1. Finely crush the jumper berries, in a mortar with a pestle.

2. Finely shred the cabbage.

3. Heat a wok, then add the oil. When the oil is hot, stir-fry the garlic for 1 minute.

4. Add the cabbage and stir-fry for 3 - 4 minutes until crispy. Remove from the wok and pat dry with kitchen paper.

5. Reheat the wok and return the cabbage to it.

6. Add the sugar, salt and crushed juniper berries and toss the cabbage so that it is well coated and thoroughly mixed with the flavourings.

7. Serve either hot or cold.
