Nutty Bars

ingredients

1/2 stick (4 Tbsp) 2 oz (50 g) butter, melted
1 cup (225 g) 1/2 lb soft brown sugar
1 egg, beaten
1/4 teaspoon vanilla essence
3/4 cup (100 g) 4 oz plain or self-raising flour
1 heaped teaspoon baking powder
1/2 teaspoon salt
1 cup (100 g) 4 oz walnuts, almonds, hazelnuts (filberts) or cashews, chopped

method

1. Mix together the butter and sugar, then beat in the egg and vanilla essence.

2. Sift the flour with the baking powder and salt and stir into the sugar mixture. Fold in the nuts.

3. Turn the mixture into a greased and lined Swiss roll tin.

4. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 minutes, or until a skewer inserted into the centre comes out clean.

5. Cut into bars while still hot, then leave to cool in the tin.
