Golden Puff Grill

ingredients

serves 3
3 halibut, cod or haddock fillets
1 tablespoon melted butter or oil
1 egg white
25 g (1 oz) cheese, grated
salt
pinch of cayenne pepper

method

1. Arrange the fish fillets on the grill rack and brush with the butter or oil.

2. Cook under a preheated grill for 5 to 10 minutes, turning once, until the fish is cooked through.

3. Whisk the egg white until stiff and fold in the cheese, salt and cayenne.

4. Spread this mixture over the fillets and grill until the top is golden and puffy.

5. Serve with a crisp green salad and heated potato crisps.
