Enveloped Herrings

ingredients

serves 4
3 Tbsp (40 g) butter
salt
pepper
4 shallots, finely chopped
4 mushrooms, finely chopped
4 teaspoons chopped parsley
4 equal-sized herrings
4 slices of fried bread, cut to fit the herrings
finely grated lemon rind to garnish

method

1. Cut four ovals from greaseproof paper large enough to wrap the herrings.

2. Grease the paper with half the butter and sprinkle with salt and pepper.

3. Melt the remaining butter in a frying pan and fry the shallots and mushrooms until softened.

4. Stir in half the parsley and salt and pepper.

5. Split the herrings down the backbone and stuff with the mushroom mixture.

6. Reshape the herrings and wrap individually in the paper ovals.

7. Place in a baking dish and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 to 40 minutes or until the fish will flake easily.

8. Unwrap the fish and place on the fried bread.

9. Garnish with the remaining parsley and the lemon rind.
