Apple Ginger

Serve as a preserve or use as a tart filling.

ingredients

makes 3.75 kg/8 lb
4 1/2 lb (2 kg) sugar
1.8 litres (3 pints) water
4 1/2 lb (2 kg) apples, peeled, cored and thinly sliced
2 oz (50 g) ground ginger

method

1. Dissolve the sugar in the water and bring to the boil.

2. Simmer until a thick syrup is formed.

3. Add the apples and simmer until transparent.

4. Stir in the ginger and simmer for a further 5 minutes.

5. Pot as usual.
