Lamb and Apricot Tikka

ingredients

serves 4
375 g lamb neck fillet, cut into 2 cm cubes
4 tbsp vegetable oil
1 onion, finely chopped
435 g jar Tikka Masala Sauce
3/8 cup (75 g) dried apricots, cut into strips

method

1. Preheat the oven to 190°C (375°F) Gas Mark 5.

2. Place the cubes of lamb in a hot pan and fry until sealed on all sides. Transfer to an ovenproof dish.

3. Add the oil to the saucepan and cook the onion until softened then place them in the dish with the lamb.

4. Pour in the tikka masala sauce, add the apricots, cover and cook in the preheated oven for 45 minutes.

5. This dish is delicious served with rice and poppodums.
