Roast Leg of Pork with Lemon, Sage and Honey

ingredients

serves 4 - 6
900 g pork leg, boned and rolled
1 lemon, sliced into 8
8 g sage
Salt and freshly ground black pepper
3 tbsp vegetable oil
3 tbsp honey
2 tbsp water

method

1. Preheat oven to 200°C, 400°F, Gas Mark 6.

2. In a roasting tray lay the lemon and sage on the base, place the pork on top and season well with salt and pepper. Pour over the oil and cook in the oven for about 1 hour, basting every 20 minutes.

3. Pour over the honey and water and return to the oven for about 15 minutes, basting every 5 minutes. The pork should be sticky and nicely glazed when ready.

4. Serve sliced with the vegetables of your choice.
