Microwave Tarragon Chicken

ingredients

serves 4
1.6 kg (3 1/2 lb) oven-ready chicken
1 onion, skinned
1 large lemon, sliced
1 bunch fresh tarragon, trimmed
1 cup (8 fl oz.) dry white wine
salt and pepper, to taste
1/2 oz (15 g) polyunsaturated margarine
1 level tbsp (15 ml) plain flour (All purpose)
2/3 cup (150 ml) 1/4 pt low fat natural yogurt
tarragon sprig, to garnish

method

1. Prepare the chicken, then place breast side down in a deep bowl.

2. Add wine and seasoning.

3. Cover and cook 100% (High) 10 minutes.

4. Turn chicken over and add lemon slices and tarragon.

5. Cover and cook 100% (High) 15 minutes, until tender.

6. Remove chicken and skin off fat, reserving cooking liquid.

7. Blend margarine and flour in a bowl. Whisk in cooking liquid.

8. Cook, uncovered, 100% (High) 2 minutes, whisking once.

9. Add yogurt and cook, uncovered, 100% (High) 1 minute. Season to taste.
