Mayonnaise (Homemade)

ingredients

makes about 6 fl oz (175 ml)
1 egg yolk
good pinch salt and pepper
1/4 tsp dry or made mustard
2/3 cup (150 ml) 1/4 pint salad oil
1 tbsp vinegar

method

1. Put the egg yolk and seasonings into a basin.

2. Gradually beat in the oil drop by drop, stirring all the time, preferably with an electric whisk, until the mixture is thick.

3. When it becomes creamy, stop adding oil, as too much oil will make it curdle.

4. Beat in the vinegar gradually, then 1 tbsp warm water. Use the same day.
