Savoy Cabbage and Apples in Curry Sauce

ingredients

serves 4
1 savoy cabbage (800 g - l kg approx)
2 dessert apples
400 g leeks
2 cups (500 ml) fruit curry sauce

method

1. Wash and quarter the cabbage.

2. Either steam the cabbage for 10 minutes or parboil in boiling salted water for 5 minutes.

3. Drain thoroughly and leave to cool, then cut the cabbage into thick slices.

4. Peel, core, and slice the apples thinly.

5. Wash the leeks and cut lengthwise into four.

6. Place a layer of cabbage in the bottom of a casserole, then add a layer of apple, and a layer of leeks.

7. Continue these layers until all the ingredients are used, ending with a layer of cabbage.

8. Pour the curry sauce over the vegetables and cover the casserole.

9. Cook in a fairly hot oven, 200°C, Gas 6, for 30 minutes.
