Spinach Tartlets

method

1. Mix together the spinach, salt, pepper, nutmeg, egg, cream and all but about 2 tablespoons of the cheese.

2. Roll out the dough and use to line four individual Yorkshire pudding tins or eight patty tins, crimping the edges.

3. Fill with the spinach mixture and sprinkle over the remaining cheese.

4. Bake in a preheated moderately hot oven 200°C (400°F) Gas Mark 6 for 30 minutes or until the pastry is golden and the filling is just firm to the touch.

5. Serve hot, warm or cold.
