Flemish beef

Preparation time: 20 minutes.
Cooking time: 1 3/4 - 2 hours.
Oven temperature: 180°C, 350°F, gas 4.

ingredients

serves 4
500 g (1 1/4 lb) lean chuck steak, cubed
1 onion, sliced
1 carrot, sliced
1 garlic clove, crushed
75 g (3 oz) mushrooms, sliced
300 ml (1/2 pint) light ale
1 beef stock cube
1 teaspoon vinegar
1 teaspoon brown sugar
grated nutmeg
salt and pepper
1 bay leaf
2 teaspoons cornflour
3 tablespoons water chopped parsley, to garnish

method

1. Brown the steak in a non-stick frying pan and place in a 1.75 litre/3 pint casserole. Add the onion, carrot, garlic and mushrooms.

2. Blend the light ale with the stock cube, vinegar, brown sugar, and nutmeg, salt and pepper to taste. Pour over the meat and vegetables. Add the bay leaf. Cover and cook in the oven for 1 1/2 hours, or until the meat is tender.

3. Mix the cornflour with the water and stir into the casserole. Cook for 15-20 minutes. Serve garnished with chopped parsley.

When you are making a dish such as a casserole that needs a long cooking time, economize on fuel by using the oven to cook another dish at the same time.
