Spicy lamb steaks

Grilled lean lamb steaks are coupled with a spicy tomato, onion and red pepper sauce - bursting with rich flavours and herbs. Served with steamed green beans, this easy dish is great for last-minute entertaining.

ingredients

serves 4
4 lean lamb steaks, each about 150 g (5 oz), trimmed of visible fat
Fry Light for spraying

for the sauce:

1 onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
2 red peppers, cored, deseeded and finely chopped
1 tbsp chopped oregano
1 tbsp chopped flat-leaf parsley
1 tsp hot paprika
400 g (14 oz) can chopped tomatoes with herbs
1 tsp granulated artificial sweetener
salt and freshly ground black pepper

method

1. Begin to make the sauce. Place a large, non-stick frying pan on a medium heat and lightly spray with Fry Light. Add the onion and garlic, and stir-fry for 3 - 4 minutes or until soft. Add the red peppers to the pan with the herbs, paprika, tomatoes, sweetener and seasoning. Bring to the boil and simmer for 5 - 6 minutes.

2. In the meantime, cook the steaks. Preheat the grill to high. Lightly spray the steaks with Fry Light and place on the grill rack. Cook under the hot grill for 3-4 minutes on each side or until cooked to your liking. Remove and keep warm.

3. Transfer the cooked sauce to a food processor and blend for 1 - 2 minutes until fairly smooth.

4. To serve, place the steaks on warmed plates and pour the spicy sauce over them. Serve immediately, with steamed green beans.
