Passion Fruit and Crab Salad

ingredients

serves 4 - 6
1 x (10 oz/300 g) can peeled lychees, drained
3 passion fruit
3 Sharon fruit, cored
4 oz (125 g) white crab meat, thawed if frozen
1 tbsp lemon juice

to garnish:

toasted flaked almonds

method

1. Cut the lychees in half and place in a large bowl. Cut the tops off the passion fruit and scoop out the seeds into the bowl.

2. Slice the Sharon fruit and add to the bowl with the crab meat and the lemon juice. Toss gently and divide between individual serving plates.

3. Top with flaked almonds and serve with wholewheat bread.
