Baked Whiting

ingredients

serves 4
4 whiting, cleaned and trimmed
1/2 stick (2 oz) 50 g butter
salt and pepper
1/2 cup (75 g) dry white breadcrumbs
lemon twists

method

1. Use a little of the butter to grease an ovenproof baking dish. Melt the remaining butter in a small saucepan. Set the oven at 190°C/375°F/gas 5.

2. Brush the whiting all over with melted butter, season with salt and pepper and sprinkle liberally with breadcrumbs. Place in the prepared dish and bake for 20 minutes. Garnish with lemon twists and serve.

Tasty but mushy

The fish was tasty but kind of mushy. I believe that 20 minutes is too long. If you're using frozen fish, it is better to bake it for the amount of time recommended on the packaging.

I hate seafood but made pre-cut whiting for a freind and tried not to touch it too much. I regretted volunteering to do this after I opened the bag and saw the sliced fish with that icky silver skin on it. This recipe is helped a lot. Although, I decided to use eggs to help the breadcrumbs to stick. I still poured the lemon juice on top of the fish after I breaded it. I served the fish with sweet potato wedges w/a mustard and syrup glaze (a Bobby Flay recipe). My friend said that the fish was perfectly cooked so the 20mins. in this recipe works well.
