Cheese and potato cakes

ingredients

450 g (1 lb) potatoes, boiled and mashed
25 g (1 oz) butter
100 g (4 oz) cheese, grated
15 ml (1 tbsp) chopped chives (or a little grated onion)
salt and pepper
15 - 30 ml (1-2 level tbips) flour, if necessary
beaten egg and dry breadcrumbs

method

1. Mix the potatoes with the butter, cheese, chives (or onion) and seasoning and beat until smooth, adding a little flour it necessary to make a firm mixture.

2. Turn on to a floured board and form into a roll.

3. Cut into 2.5-cm (1 in) slices and shape into round cakes.

4. Coat with egg and dry breadcrumbs, place on a baking sheet and bake in the oven at 190°C (375°F) mark 5 for about 20 minutes.

5. alternatively, fry the cakes.

6. These are good served with grilled bacon and tomatoes.
