Coffee Fudge

ingredients

568 ml (1 pint) fresh milk
1 cup (225 g) 1/2 lb sugar
1 stick (8 Tbsp)4 oz (100 g) butter.
2 tablespoons coffee essence

method

1. Pour the milk into a heavy based saucepan and bring slowly to the boil. Add the sugar and butter. Heat slowly, stirring all the time, until the sugar dissolves and the butter melts. Bring to the boil, and simmer gently for 25-30 minutes. Stirring occasionally.

2. Remove from the heat. Stir in the coffee flavouring. Leave to cool for 5 minutes.

3. Transfer to a buttered 12.5cm (5 inch) square tin. Mark into rectangles and cut up with a sharp knife when firm and set. Store in an airtight container.
