Apple and Cheese Pudding

ingredients

1 lb (450 g) eating apples, sliced
2 tbsp (25 g) 1 oz butter
few drops of vanilla essence
2/3 cup (150 ml) 1/4 pt fresh milk
4 oz (100 g) curd cheese
2 eggs
2 tbsp (25 g) 1 oz caster sugar (superfine granulated)

method

1. Cook the apples gently in butter and vanilla essence until slightly soft, place in a buttered ovenproof dish.

2. Beat together the milk, cheese, eggs and sugar. Pour over the apples.

3. Bake at 190°C (375°F) Mark 5 for 25 minutes.

Serve hot.
