Blackberry Syllabub

ingredients

450g (1 lb) blackberries
4 tbsp of water
4 tbsp Sweetex granulated
120 ml (4 fl oz) Greek yoghurt
3 tbsp medium white wine
3 tbsp skimmed milk

to decorate

1 - 2 blackberries
1 slice of kiwi

method

1. Simmer fruit in a medium saucepan, with the water until tender (5 - 7 minutes).

2. Turn into liquidiser or food processor and blend to a puree. Stir in Sweetex granulated. Cool, then chill.

3. In a large mixing bowl, mix in the yoghurt and wine. Then fold in half of the cold puree with the milk. Marble remaining puree into the yoghurt mixture with a metal spoon.

4. Pour into glasses and chill for 30 minutes before serving.
