Golden Yam Croquettes

ingredients

4 medium Yams, cooked
2 tbsp Sugar
2 egg yolks
2 egg whites; beaten until frothy
2 tbsp Butter or margarine
2 tsp Onion juice
1 desert spoon Salt
1 desert spoon Paprika
3 cup Crushed corn flakes

method

1. Peel cooked potatoes and cut in lengthwise slices about 1/2 inch

2. Cook and mash sweet potatoes, Add sogar, egg yolks, margarine or butter, onion juice, salt and paprika.

3. Mix well. Chill, then shape.

4. Roll in egg white and then in crushed corn flakes.

5. Fry in deep, hot fat for 3 to 5 minutes, or until golden brown.

6. Serve hot.
