Noodles with Crispy Bacon

ingredients

serves 4
1 lb (450 g) fettuccine
4-5 rashers bacon
1 egg yolks
2 tbsp chopped fresh chives
8 fl oz (250 ml) cream
salt and freshly ground black pepper
1 clove garlic, crushed
grated Parmesan cheese

method

1. Cook the noodles in boiling salted water until just tender.

2. Fry the, bacon until crisp and break into pieces.

3. Place the egg yolks, chives and cream in a bowl and mix well.

4. Add the bacon with salt and pepper to taste.

5. Place the mixture in a double boiler and heat until thick enough to coat a spoon.

6. Stir in the garlic.

7. Drain the noodles and place in a warm serving dish.

8. Mix in the bacon mixture, tossing until the noodles are well coated.

9. Serve with Parmesan cheese.
