Rhubarb Sauce

Rhubarb sauce is a tarty fruit sauce that goes well the majority of varieties of fish.

ingredients

makes about 1 cup (8 fl oz) 250 ml
350 g (12 oz) rhubarb
a little water
squeeze of orange juice

method

1. Wash and cut up the rhubarb and cook in a little water until tender.

2. Puree until smooth, and add a squeeze of fresh orange juice for extra piquancy.
