Preparation time: 5 minutes, plus freezing
Calories: 99 per portion
600 ml (1 pint) natural low-fat yogurt
4 tablespoons skimmed milk powder
4 teaspoons instant coffee powder or granules
artificial liquid sweetener, to taste
1. Mix the yogurt, skimmed milk powder and instant coffee together.
2. Add artificial sweetener to taste and stir well.
3. Pour into a shallow dish and freeze for 2-3 hours.
4. Stir occasionally, mixing the frozen edges to the centre. The mixture should be eaten when quite soft.
The skimmed milk powder gives a deliciously smooth texture to the sorbet and helps to prevent the mixture freezing too hard. If you do not use an artificial sweetener in coffee, you will not need to add any to the sorbet!
