Apple and Walnut Surprise

ingredients

serves 6
1 cup (110 g) self-raising flour, sifted
1/2 stick (2 oz) 50 g butter, melted
1 egg, beaten
1 tsp vanilla essence
2 tsp grated lemon rind
1/3 cup (65 g) caster sugar (superfine granulated)
6 oz (175 g) stoned (seeded) dates, chopped
2 tbsp chopped walnuts
4 medium cooking (tart) apples, peeled, cored and chopped

method

1. Preheat the oven to 400°F (200°C) Gas Mk 6.

2. Put the flour in a bowl. Make a well in the centre and pour in the butter, egg, vanilla essence and lemon rind.

3. Mix thoroughly using a wooden spoon.

4. Add the sugar, dates, walnuts and apples and mix well.

5. Put the mixture in a greased shallow ovenproof dish and bake in the oven for 50 - 60 minutes until risen and deep golden brown in colour.

6. Cut into squares and serve.
