Apple and sultana strudel

ingredients

serves 8
350 g Bramley apples, peeled, cored and sliced
1 Cox's apple, peeled, cored and sliced
Finely grated zest and juice of 1 lemon
2 tbsp soft brown sugar
1 tsp cinnamon
100 g sultanas
270 g pack frozen filo pastry, thawed
50 g butter, melted
40 g fresh breadcrumbs
1 tbsp icing sugar

method

1. Preheat oven to 190°C/Gas 5.

2. Mix apples with the lemon zest and juice, brown sugar, cinnamon and sultanas.

3. Place the pastry sheets on a baking tray, brushing between each sheet with butter.

4. Sprinkle with breadcrumbs, and pile the filling lengthways along the middle of the pastry.

5. Fold in the pastry ends to stop the filling oozing out, then wrap up into a thick roll.

6. Brush with butter, bake for 35 minutes and serve dusted with icing sugar.
