small head of Chinese leaves, shredded
227 g (8 oz) can pineapple chunks
100 g (4 oz) cottage cheese
100 g (4 oz) Cheddar cheese, diced
100 g (4 oz) cooked ham, diced
salt and pepper
1 tablespoon lemon juice
1. Arrange the Chinese leaves in the bottom of a serving dish. Drain the pineapple chunks. Mix with the cottage cheese, Cheddar and ham. Season well and spoon the mixture on top of the leaves.
2. Halve the avocado. Scoop out the stone, then peel and thinly slice. Sprinkle with lemon juice and arrange the slices on top of the cheese mixture. Chill before serving.
If you're counting the calories, omit the avocado. Use fruit canned in unsweetened juice, low-fat Cheddar and lean ham.
