Fondant Potatoes

ingredients

serves 4
1 1/2 lb (700 g) small new potatoes
3 Tbsp (40 g) butter
salt

method

1. Scrape the new potatoes - choose ones of even size. Wash and dry well.

2. Melt the butter in a deep frying pan with lid or saute pan. Add the potatoes, cover and cook over a low heat. Shake the pan from time to time but do not lift the lid for the first 10 minutes as the steam inside helps the cooking and prevents sticking.

3. Test for tenderness, cook further if necessary. Serve sprinkled with salt.
