Avocado Pears Vinaigrette

ingredients

serves 4
2 large, firm, ripe avocado pears
2 tbsp lemon juice
vinaigrette sauce

method

1. Make sure the pears are firm but ripe, and are not discoloured.

2. If they show any signs of over ripeness such as being soft or blackened, use them for a cooked dish.

3. Halve the pears lengthways and remove the stones.

4. Brush the halved pears with lemon juice immediately to prevent discoloration.

5. Serve 1 half pear per person, cut side uppermost on a small plate, with a special avocado spoon, stainless steel or silver teaspoon or a grapefruit spoon.

6. Serve the vinaigrette sauce separately.
