Melon Cup

ingredients

serves 4
juice of 1 lemon
2 tablespoons clear honey
1 kg (2 1/4 lb) honey dew melon
2 seedless mandarins
1 apple
1 banana
225 g (8 oz) grapes
1 tablespoon vanilla sugar
5 tablespoons single cream

method

1. Stir the lemon juice into the honey. Cut off the top third of the melon - in a zigzag pattern if you wish - and remove the seeds. Remove the melon flesh with a ball cutter.

2. Peel the mandarins and remove the skin from each segment. Peel, quarter, core and slice the apple. Peel the banana, halve lengthways and slice. Halve the grapes and remove the pips.

3. Mix the fruit together in a bowl and stir in the honey and lemon. Beat the vanilla sugar into the cream, fold the mixture into the fruit salad and spoon the fruit into the melon skin.
