Cheese and tomato loaf

ingredients

serves 4
350 g (12 oz) mature Cheddar cheese, grated
500 g (1 lb) firm tomatoes, very finely chopped
8 large gherkins, finely chopped
6 spring onions, finely chopped
2 teaspoons natural yoghurt
1 teaspoon French mustard
1 tablespoon chopped fresh parsley
salt and freshly ground black pepper
melted margarine or butter, for greasing

to garnish

1 tomato, sliced
2 large or 4 cocktail gherkins, sliced sprigs of parsley

method

1. Brush a 500 g (1 lb) loaf tin with the melted margarine or butter.

2. Put all the loaf ingredients in a large bowl with salt and pepper to taste and mix together until thoroughly combined.

3. Spoon the mixture into the prepared loaf tin, press down and
cover with greaseproof paper and weight down. Chill overnight.

4. Drain off liquid, then turn out loaf on to a serving dish and garnish with tomato and gherkin slices and sprigs of parsley.
