Rosemary Potato Chunks

ingredients

serves 4
450 g (1 lb) potatoes
30 ml (2 tbsp) olive oil
1 large onion, sliced
3 slices bacon, rinded and chopped
5 ml (1 tsp) rosemary
50 g (2 oz) 1/2 cup grated Parmesan cheese

method

1. Peel the potatoes and cut into small chunks.

2. Place the oil in a frying pan and fry the potatoes, onion and bacon for 8 minutes until they are browned.

3. Spoon into an ovenproof dish, sprinkle over the rosemary and Parmesan cheese and bake at 180°C (350°F) Gas mark 4 for 15 minutes.
