John Dory au Gratin

ingredients

serves 3 to 4
8 John Dory fillets
fat for greasing
salt and pepper
60 ml/4 tbsp milk
2 oz (50 g) Gruyere cheese, grated
2 cups (4 oz) 120g dry white breadcrumbs
2 tbsp (1 oz) 25 g butter

method

1. Grease an ovenproof baking dish. Set the oven at 190°C/375°F/gas 5.

2. Roll up the fish fillets and place them in the prepared dish. Sprinkle with salt and pepper and pour over the milk. Mix the cheese and breadcrumbs in a bowl and sprinkle the mixture over the fish.

3. Dot with butter and bake for 20 minutes. Serve at once.
