Potato Salad with Horseradish

ingredients

serves 4
1 kg (2 lb) potatoes
a litle milk
Horseradish Mayonnaise
parsley

method

1. Peel the potatoes and boil in salted water, allow to cool, then cut into chunky slices.

2. Cover the potato slices with mayonnaise (you may need to thin it with milk) , taking care not to break the potatoes.

3. Serve garnished with parsley.
