Indian Potato Salad

ingredients

serves 3 - 4
15 g (1 tbsp) tamarind, pulp or dried
75 ml (5 tbsp) hot water
325 g (12 oz) potatoes, boiled and peeled
1 small onion, finely chopped
1 -2 fresh green chillies, seeded and finely chopped
2.5 g (1/2 tsp) salt
2.5 g (1/2 tsp) chilli powder
7 g (1 tbsp) coriander leaves, chopped

method

1. Soak the tamarind in the hot water for 20 minutes. Squeeze out and reserve liquid.

2. Cut the potatoes into 0.5cm (1/4 in) slices and cool thoroughly.

3. Gently mix in all the ingredients. Serve cold.
