Roast Garlic and Fennel

ingredients

serves 6
3 heads garlic
2 bulbs fennel, sliced
1 shallot, chopped
15 ml (1 tbsp) olive oil

method

1. Separate the garlic bulbs and trim. Have a large piece of foil ready and place the garlic bulbs in this with the sliced fennel.

2. Add the chopped shallot and pour over the olive oil.

3. Wrap up in a parcel and roast in the oven at 180°C (350°F) Gas mark 4 for 30 minutes.

4. Serve with grilled fish or meat.
