45 ml (3 tbsp) olive oil
2 cloves garlic, crushed
10 ml (2 tsp) chopped fresh herbs
4 chicken breasts
450 g (1 lb) courgettes (zucchini), thinly sliced
1 aubergine (eggplant), diced
1 red onion, sliced
1 small green (bell) pepper, chopped
2 tomatoes, chopped
Salt and pepper
method
1. Blend the oil and garlic together with the chopped herbs in a bowl.
2. Cut the chicken into 1 cm (1/2 inch) strips and add to the olive oil.
3. Allow to marinate while preparing the remaining ingredients.
4. Divide the courgettes, aubergine, onion, green pepper and tomatoes between four foil containers.
5. Add the chicken divided between the four portions and pour over the oil and herb dressing.
6. Season with the salt and pepper and wrap up tightly. Cook for 20 minutes, unwrap and serve.
