Lime Relish

ingredients

makes approx. 1.2 litre (2 pt)
12 limes, washed
cold water
350 g (12 oz) sugar
300 ml (1 1/2 pt) vinegar
150 ml (1/4 pt) water

method

1. Place the limes in a large pot and add enough cold water to cover. Soak the limes for 24 hours.

2. Drain limes and return to pot. Add enough cold water to cover and cook for 15 - 20 minutes, or until limes can be easily pierced with a fork. Drain well and set aside to cool.

3. When the limes are cool, cut into eighths. Remove the seeds. Set the limes aside. Place the sugar, vinegar and water in a saucepan. Cook over a medium-low heat until syrupy, about 15 minutes.

4. Place the lime pieces into hot sterilized jars. Cover with syrup. Seal, cool, and store.
