Cheese Fudge

ingredients

350 g (12 oz) curd cheese
75 g (3 oz) sugar
15 g (1 tbsp) pistachio nuts, finely chopped

method

1. Put the curd cheese on a plate and rub with the palm of your hand till smooth and creamy.

2. Put the cheese in a pan over medium heat, add the sugar and, stirring constantly, cook till it leaves the sides and a ball forms.

3. Remove from the heat and spread on a plate 1 cm ( 1/2 in) thick. Cool slightly, sprinkled with the nuts and cut into small diamonds.

4. Serve warm or cold.
