Fritters in Syrup

ingredients

serves 4 - 6
200 g (7 oz) plain flour
7.5 g (1 1/2 tsp) baking powder
150 ml (1/4 pt) yoghurt
approx. 225 ml (8 fl oz) milk
225 g (8 oz) sugar
450 ml (3/4 pt) water
oil for deep frying

method

1. Sieve together the flour and baking powder. Mix in the yoghurt. Add enough milk to make a thick batter.

2. Boil the sugar and water together for 10 minutes.

3. Heat the oil in a pan over medium high heat. Drop in 15 ml (1 tbsp) of the batter at a time and fry until crisp and brown. Drain on paper towels, and keep warm.

4. Soak the fried malpoa in the syrup for 5 minutes. Serve in a little syrup, hot, warm or cold.
