Basic Buttercream


3 egg yolks
75 g (3 oz) icing sugar, sifted
200 g (7 oz) unsalted butter, softened


1. Combine all the ingredients and the chosen flavour together and beat until well blended and smooth.

2. Chill for a short time.


40 ml (2 1/2 tbsp) fresh lemon or orange juice, strained or 2 1/2 tbsp liqueur, spirit or eau de vie (Grand Marnier, rum or kirsch); or 5 g (l tbsp) coffee powder dissolved in 1/2 tsp boiling water; or 100 g (3 1/2 oz) plain chocolate, melted and cooled; or 15 g (1 tbsp) cocoa powder.

It is not meant to be icing!
It is buttercream which is usually used as a filling in between layers of a victoria spong cake for example.

This really is great! If you ad about three or four DROPS of vanilla essence (flavoring!) it really gives it a kick! Its lovely! xxx

Im a chef and am concerned that u are using fresh raw eggs without a warning to young children and pregnant ladies?

Im sure the parents would know about it if there children were looking to do some baking, i.e asking mum and dad if its ok to use the products then mum/dad would give the warning your so concerned about!!! common sence!

I'm sure there are other foods which have raw eggs that don't require a warning. Mayonnaise comes to mind

I agree with a former poster - this is gorgeous with vanilla.

Raw yolks

Raw organic free range egg yolks are perfectly safe from Chickens, Even ordinary battery eggs are too ( the salmonella is on the shell)

The salmonella comes from the outside If you are pregnant or otherwise wash the egg in cold water and washing up liquid first and dry and then break it Then there is no chance of salmonella

I better buy some more eggs and butter This is getting expensive but hey a birthday cake is but once a year

That was rubbish! It tasted alright once you halved the butter, and trippled the icing sugar! And added orange juice to mask the taste!!

It tasted ok but i had to add more icing sugar and the mixture ended up lumpy because of too much butter.
