Baked Apples with Almonds

ingredients

serves 4
4 large cooking apples
30 g (2 tbsp) sultanas
5 g (1 tsp) cinnamon
15 g (1 tbsp) ground almonds
10 ml (2 tsp) lemon juice
15 ml (1 tbsp) syrup
25 g (1 oz) butter
4 slices brown bread
4 glace cherries
24 almond flakes

method

1. Wash the apples and remove the cores, leaving the apples whole.

2. Slit the skins shallowly around the equator to prevent splitting when cooking.

3. Mix the sultanas, cinnamon, ground almonds, lemon juice and syrup together in a bowl.

4. Stuff the mixture into the centre of each apple, top with a knob of butter.

5. Cook in the oven at 200°C ( 400°F) Gas 6 for 40 - 60 minutes, depending on size.

6. Toast the brown bread. Arrange on 4 plates with an apple each.

7. Decorate the tops with a glace cherry and flaked almonds and serve warm.

8. The toast soaks up all the delicious juice.
