The sesame seeds add a crunchy texture which contrasts well with the wilted spinach in this easy vegetable dish.
Take care when adding the spinach to the hot oil as it will spit furiously.
225 g (8 oz) fresh spinach, washed
25 ml (1 1/2 tbsp) sesame seeds
30 ml (2 tbsp) groundnut oil
1.5 ml (1/4 tsp) sea salt flakes
2 â€” 3 garlic cloves, sliced
1. Shake the spinach to get rid of any excess water, then remove the stalks and discard any yellow or damaged leaves. Lay several spinach leaves one on top of another, roll up tightly and cut crossways into wide strips. Repeat with the remaining leaves.
2. Heat a wok to a medium heat, add the sesame seeds and dry fry, stirring constantly, for 1 - 2 minutes until golden brown. Transfer to a small bowl and set aside.
3. Add the oil to the wok and swirl it around. When hot, add the salt, spinach and garlic and stir-fry for 2 minutes until the spinach just wilts and the leaves are coated in oil.
4. Sprinkle over the dry-fried sesame seeds and toss well. Serve at once.
