Fried Bananas

These delicious treats are a favourite among children and adults alike. They are sold as snacks throughout the day and night at portable roadside stalls and market places. Other fruits such as pineapple and apple work just as well.

ingredients

serves 4
115 g (4 oz) plain flour
2.5 ml (1/2 tsp) bicarbonate of soda
pinch of salt
30 ml (2 tbsp) granulated sugar
1 egg
90 ml (6 tbsp) water
30 ml (2 tbsp) shredded coconut or 15 ml (1 tbsp) sesame seeds
4 firm bananas oil for frying
30 ml (2 tbsp) honey, to serve (optional)
sprigs of mint, to decorate

method

1. Sift the flour, bicarbonate of soda and salt into a bowl. Stir in the granulated sugar. Whisk in the egg and add enough water to make quite a thin batter.

2. Whisk in the shredded coconut or sesame seeds.

3. Peel the bananas. Carefully cut each one in half lengthways, then' in half crossways.

4. Heat the oil in a wok or deep frying pan. Dip the bananas in the batter, then gently drop a few into the oil. Fry until golden brown.

5. Remove from the oil and drain on kitchen paper. Serve immediately with honey, if using, and decorate with sprigs of mint.
