Wheat Free Chicken in Walnut and Garlic Sauce

This recipe is Gluten free, Wheat free and Dairy free.

ingredients

serves 8
8 large chicken breasts, off the bone
12 tablespoons of olive oil
6 heaped tablespoons of roughly chopped walnuts
6 heaped tablespoons of chopped parsley
6 plump cloves of garlic, peeled and crushed
Plenty of salt and freshly ground black pepper

method

1. Preheat the oven to 200°C (400°F) Gas mark 6

2. Place the chicken breasts in an ovenproof serving dish.

3. Put all the remaining ingredients into a food processor and whiz briefly into a sauce.

4. Spread the mixture over the chicken and bake in the oven for 40 minutes until golden and cooked through.

5. Serve hot with potatoes, rice, pasta or bread to soak up all the lovely juices
