Low Fat Savoury Scramble

ingredients

1 1/2 teaspoons margarine
1 tablespoon chopped spring onions
2 oz (60 g) button mushrooms, sliced
3 eggs
3 tablespoons skimmed milk
2 oz (60 g) cottage cheese
salt and pepper

method

1. Place the margarine in a basin or jug and melt on full power for 50 seconds.

2. Add the spring onions and mushrooms and cook at full power for 1 minute 30 seconds.

3. Beat the eggs, milk, cottage cheese and seasoning into the container and return to the oven. Cook on full power for 2 minutes 30 seconds, removing and stirring well once or twice during this final cooking time.

4. Remove from the oven when just set, stir well and serve
